Vegetarian Lentil Burgers 
In a food processor, combine 1 cup cooked lentils, 1 cup diced mushrooms, 1 sliced onion, 1/2 cup rolled oats, 2 chopped garlic cloves, 1 tbsp. cumin, 1/2 tsp. cayenne powder, and salt and pepper to taste. Form into patties and cook over medium-high heat for three to four minutes per side. Serve these super-nutritious burgers on whole-grain buns with desired toppings.


Easy Hummus Dip Recipe
  • 15-oz can of chick peas
  • 1 tbsp olive oil
  • 1/4 cup water
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp paprika (optional)

Place first 5 ingredients in blender or food processor.
Blend until smooth.
Serve in bowl, sprinkled with paprika.
Several Servings (about 1 1/2 cups)

  1. Have you tried the hummus recipe yet? It looks super easy - I want to try it! Right now I'm hooked on Trader Joe's Mediterranean Hummus - it's super creamy, unlike some of the prepackaged brands.
