New Recipes for the Week: Week 2

(On an aside note: These weeks may not be consecutive! It may take me more then one weeks time to try them!)


Here are my newbies for Week 2:
1. Healthy Momma Barbecue Chicken
I prepared this one last week, but cooked it this week to have for my lunches for this week at work.  It smelled super yummy and I look forward to eating it this week.

2. Slow Cooker Spaghetti Sauce
This is cooking in my slow cooker as I type! I've sampled it a couple of times and its sooo good! I added a few things - pureed summer squash and zucchini and a portobello mushroom chopped really small.

3. Almost No Sugar Ice Cream Grahamwiches
I made these today as well and they are in the freezer setting right now.  I let the pudding mixture set for about 5 minutes in the fridge before putting them together because it was really runny otherwise.   I used an entire box of graham crackers and still have a ton of the pudding mixture leftover so I put it in a container and froze it!

4. Deceptively Delicious Peanut Butter and Jelly Muffins
I finally got around to making these today and they are super moist and yummy! I do NOT taste the carrot at all! Hoping my kiddo likes them too!

NRW: Week 1 UPDATE

In this post, I mentioned some new recipes that I wanted to try.  Here is an update:

1. Sweet and Tangy Chicken

This was super easy to make and REALLY yummy! I made the full recipe and used the left overs for lunches this week for work.  This one is a keeper that I need to add to my recipe book!

2. Deceptively Delicious Peanut Butter and Jelly Muffins

Have not made these yet.  Maybe today! Its a snowy day here and the kiddo and I will need something fun to do!

3. Deceptively Delicious Couscous
This is REALLY good! BUT it did NOT cook at all like the recipe says.  Its says to take it off the heat and let it all stand until the liquid is absorbed and the couscous is tender, which I did using the time frame suggested and the couscous was still VERY crunchy!!! I had to add more chicken broth and put it on the stove again.  Once it cooked it was very good; it was spicy though so next time I think I may omit the pepper.  And the best part was that Sunshine ate it willingly!


4.  Deceptively Delicious Chocolate Pudding
This was good, but not as smooth as I would have liked it.

New Recipes for the Week: Week 1

Its been ages since I've blogged, but I am trying to get back at it now!  Lots going on in my little world, but more about that later! I have decided I need to try and cook more at home and eat out less so I am going to start posting about some new recipes I am going to try on for size!  Here are this weeks newbies:

More Recipes To Try!

I bought some portabello mushrooms, with the intent of making stuffed mushrooms; knowing they are generally high in points I began the hunt for a weight watcher friendly recipe that was yummy!! Here is one I found:


Yield: 4 servings (serving size: 1 mushroom)

Ingredients

  • 2/3  cup  chopped plum tomato
  • 1/4  cup  (1 ounce) shredded part-skim mozzarella cheese
  • 1  teaspoon  olive oil, divided
  • 1/2  teaspoon  finely chopped fresh or 1/8 teaspoon dried rosemary
  • 1/8  teaspoon  coarsely ground black pepper
  • 1  garlic clove, crushed
  • 4  (5-inch) portobello mushroom caps
  • 2  tablespoons  fresh lemon juice
  • 2  teaspoons  low-sodium soy sauce
  • Cooking spray
  • 2  teaspoons  minced fresh parsley

Preparation

Prepare grill.
Combine the tomato, cheese, 1/2 teaspoon oil, rosemary, pepper, and garlic in a small bowl.
Remove brown gills from the undersides of mushroom caps using a spoon, and discard gills. Remove stems; discard. Combine 1/2 teaspoon oil, juice, and soy sauce in a small bowl; brush over both sides of mushroom caps. Place the mushroom caps, stem sides down, on grill rack coated with cooking spray, and grill for 5 minutes on each side or until soft.
Spoon 1/4 cup tomato mixture into each mushroom cap. Cover and grill 3 minutes or until cheese is melted. Sprinkle with parsley.
Notes: Since the garlic isn't really cooked, the mushrooms have a strong garlic flavor. Grill the mushrooms stem sides down first, so that when they're turned they'll be in the right position to be filled. If you want to plan ahead, remove the gills and stems from the mushrooms and combine the filling, then cover and chill until ready to grill.

Yummy Eggplant!!!

Part of a post from a blog called "Ex Hot Girl" that looks sooooo yummy and I can't wait to try it!

Cut up the bastard.  I chose 1/2 inch-ish slices.  Nice and thick.



Then I whisked up the delicious marinade:
4 tbs extra virgin olive oil
2 tbs balsamic vinegar (I was out so I used balsamic vinaigrette dressing)
2 cloves garlic chopped finely
salt and pepper to taste


Then I brushed both sides of the eggplant slices with the marinade.  I also cut some groove slices into the meat of the eggplant (on one side only, criss crossed, not going all the way through) so the marinade would soak in.  I let it sit for about 15 minutes.


And voila!  This is after putting them on the grill for about 12-15 minutes total, flipping once.  DELICIOUS!  The flavor was so good you guys, I can't wait to make more. <3
